Tamboril
Opened in 1955, this bar is now run by the founder’s sons, twin brothers Jesus and Miguel Martinez. They are known for garlicy wild mushrooms, anchovy tempura and the house specialty: Pimentos Rellenos de Carne, in which ground beef sautéed with a light béchamel is stuffed in a wood-fired piquillo pepper, dipped in a light tempura batter and deep fried into a satisfying and delicious dish. Next to the Plaza of the Constitution, the bar is so miniscule many diners take their tapas outside to enjoy them in the plaza. The square is surrounded by a former bullfight arena and if you're lucky, you might come across some traditional dancing.
